You may need a reflective board for the bike rack and although not compulsory yet until 2026 an orange beacon V-16 in the event of a breakdown. I don't know how you would attach the beacon to a motorhome.
I checked on my van and the light can be fixed onto the Sat base reached trough the Skylight. ( NCT centres have a version)
The reflection boards for the bike carrier are different for Spain and Italy.
Spain is 3 red and 3 white hatched, reflective stripes. In Italy, ( must be aluminum) the design is 5 red and 4 white hatched, the stripes face towards their offside.
It's illegal to own or use a dash cam in Portugal, (Austria, Luxembourg).
France, ( Germany, Switzerland) your not allowed use speed camer warning on your sat Ave (you are suppose to deactivated it)
Portugal, On a hill, the vehicle travelling uphill should give way to the one going down, in all circumstances.
France the rear Angles Morts must be on their, nearside and not obstructed by the bikes.
I saw a guy on the N11 the other day with the rear one in the center, about 500mm down below the reversing camera.

I'll be taking the angle mort sticker's off , in case I'm somewhere I shouldn't be in a van over 3.500 , no point in drawing attention to the van, speed limit is lower in Spain too

We're just back after four months touring Spain Portugal and France. The only motorhomes I noticed with the Angle Mort stickers were one which looked obviously over 3.5t.
Motorhomes which are available at 3.5t in basic specifications but often available with an uprate option to 3.85t or more didn't appear to have the sticker as a rule.
FWIW, mine is 3.85t uprated from 3.5t and I haven't bothered with the stickers.

As a matter of interest do you know how much gas you used, I was hoping to get away with 1 x 11kg bottle for a 7 week trip,we tend to use sites (showers+ ehu) and obviously wouldn't need heating, so just using gas for some cooking, and the fridge when we're off grid

We did 8 weeks Spain/Portugal earlier this year. Used campsites with EHU (ACSI) mostly. Probably 6 days off grid in total. No heating used.
Went out with 2 full 11kg propane. One connected to Moho used 2.9kg (fridge when not on EHU plus hob occasionally). The second one we used a good bit for a baby Weber only also used just 2.6kg. Usage determined by weighing Moho cylinders at end of journey and comparing with weight of full cylinder.

Can't give a valid reply.
We spent most of the time off grid but depending on the SOC of the LiFePO4 batteries we used the1000watt kettle airfryer and microwave instead of the gas hob and oven.
I have a gaslow system which was occasionally topped up.
Given the above we probably used less gas than might be expected.
We used1 x 11kg bottle in 3 weeks before having to change to the other bottle, only use the gas for the fridge, cooking and showers. In the 4 weeks we were away we only hooked up to electric a couple of times
