Just my opinion but I’d go the extra few miles into the north of Spain, much cheaper and the further south you go the warmer it gets

Concur.
South of Barcelona and north of Malaga gets the best winter climates.

South of France can get pleasant winter sun but by the same token it is colder and gets considerably more rain….. the weather is more reliable on the Spanish med coasts.
