Is it true that a pitch should be fairly level for gas appliances to work ?

Fridge yes.
Cooker not so much but you don’t want your pans to slide.

Is this guesswork ?

I think it might be in your fridge manual and it may vary between fridge makes. But I have vans where even with levelling chocks I haven’t been able to get the van level but the fridge has worked perfectly.

But if you are having a problem with your fridge and your van is not level try moving to a different location that is more level.

On a personal note I’m not the spirit level fanatic that I do see quite often. I tend to use a glass filled with liquid or a bottle of water to ensure I’m level enough. Being level or levelish helps with cooking, draining the shower and sleeping.

When parked on my driveway, if I want to level the van it requires about a 3 inch lift of the rear axle, but it's normally parked with the slope to aid rainwater drainage off the roof.
I turn on the fridge the day before we head off it cools down and the freezer part freezes up perfectly without the van being levelled.

I have never had a problem with the fridge not working on uneven ground. Unless its very uneven I don't use levellers. If I don't roll out of bed its good enough for me.

On gas , the flame will go to the side of the flue if the van is not level, possibly overheating it , other than that, level is all about, sink emptying, pots sliding off cooker, you only need reasonable level not spirit level , I hate having to take them out and only use them when really necessary

Sure, I realise that not level doesn't mean ready to tip over 😁.

I think this should answer your question without a doubt.
"Thank you for contacting Dometic. The refrigerator should not be more than 3 degrees unlevel left to right, or 6 degrees unlevel front to back. We do not recommend having the unit unlevel for more than 1-2 hours as this can increase the chances of a blockage. However, we do recommend if you can, have the unit level at all times."

Using a spirit level, 3/4 of the bubble within the two lines, would roughly be about 6°

So judging by that the fridge will actually work, but doing so while unlevel to the noted degrees could be harmfull And or dangerous. Good to know. Thanks.
