Spot on Darren, I got fed up trying to buy charcoal that hadn't been treated with some chemical or other to make it "easy light" so I started making my own. I'm happy with the result.

That exactly the same excuse I use when the Gards arrived after some busybody complains about backyard burning

always keep a bag handy to show them the last burn

I'd say it burns just as long as the stuff you buy in shops and maybe a little hotter, and it's 100% chemical free and sustainable. I'll take better note tomorrow when I'm doing another BBQ, purely in the interests of charcoal research of course.

I always keep the larger tree and shrubs trimming for when I want to do a real BBQ instead of the Gas one.
our buddy in Spain taught me how to use an open fir to cook over.

Wouldn't mind having a go at that myself, had a couple of cherry trees cut down not so long ago, wonder if I could use some for this?

It's dead easy, if I can do it anyone can do it. Basically you get a load of timber, untreated, and get a good roaring fire going then shut off the oxygen and let it "cook" away by itself until it's completely cold.

Get a barrell and drill a load of vent holes in it.

Place paper and kindling in the bottom.

Fill with timber and light it. Initially you'll get a bit of smoke, most of what you see here is steam from moisture being driven out of the timber. After a time you'll have a roaring fire with no smoke or steam.

When you reckon it's burned enough, (trial & error and experience.), cover with metal lid and block vent holes with soil or sand. Wait until the barrel has completely cooled down. Shut it off too late and you end up with ash, shut it off too early and you end up with a load of charred timber, which you can use again. When you get this right you end up with great homemade charcoal.

Martin, do you find the open fire handier/better than charcoal. Does it affect the taste differently?

I think its quicker to get up to cooking heat if the wood is dry, and once you have the baskets with the feet on them, you can cook just about anywhere you can get a bit of flat surface and dry wood ( not building wood ) . I use a bit of flat metal to put the fire on at home.
My buddy will say that any wood that produces fruit or berries is best, he uses mostly Almond or orange and says there is a difference flavour from each wood but they have done this all their lives so they would know.
You light a decent fire with stuff up to as tick as your wrist , when the smoke burns off flatten out the grey to a bit wider then your basket and half as height as the legs. then shove the remainder of your fire to the side and keep it going to add more grey to the cooking as it burns down.
this is a nrw basket I got last year.
