What kinda food or meals do you find handy to make in the camper/motorhome can be tasty stuff or just down right belly filling beer soaking nosh :)

When we are feeling very posh we get the ready made meals in a can at Asda, they are that nice I made their meat ball one and had to get the can back out of the bin as I thought it might be dog food.

Ingredients

1 Chicken Thigh per person
6 tbsp olive oil
100g Chorizo or garlic sausage
50g leanboned pork, cut into cubes
1 finely chopped onion
1 tspn chopped garlic
1 red or green pepper cut into strips
1 large tomato seeded and chopped
1 large cup pudding rice, Paella rice, or Risotto rice
Saffron or colourant
12 medium sized prawns in shell
12 clams or cockles
12 mussels (or you could use a seafood cocktail from the supermarket)
Use double the amount of water (ie 2 cups of water boiled on the other ring with chicken stock cube)



Cooking Instructions

1) Using a large frying pan, brown the chicken till golden in 3 tbsn oil, take out and set aside,
2) Brown sausage or chorizo on both sides, and set aside,
3) Pour remaining oil into pan and when hot brown the pork, onion, garlic, peppers and tomato, cook briskly till most of the liquid has been absorbed,
4) Leave these in the pan and add the rice, salt, colourant, pour on the stock and bring to the boil,
5) Place on top of the rice the chicken, chorizo, mussels, clams, (If using cooked prawns either with the shell on or off just place on top five minutes before serving to warm through),
6) Simmer on a low heat until all the liquid has been absorbed,
7) Some pink stuff can be consumed whilst you wait for it to cook,
8) Leave to rest for five minutes and serve with lemon wedges.
