Have read plenty of posts about inverters, just wondering if anyone has a particular make they would recommend?

Welcome to mhc, Saul.
On the blue banner across the top of the page, there is magnifying glass icon.
This our search engine.
You will pull up at least 10 informative topics on inverters, cabling size, battery capacity, etc.
Afterwards if you are confused about terminology, we are here to help with your questions.
Happy reading,
Malcolm

The only way you can avoid getting one that's not 'good' is to pay a fair price to a reputable supplier.
Two major brands which come to mind that have a quality reputation to uphold are Dometic and Stirling

The old sayings buy cheap buy twice and you only get what you pay for both hold true for inverters as they do for everything else.

It depends on the way in which your batteries are connected to each other as to the output but if you look and the are connected positive to positive/negative to negative then it’s set up for 12v which the way nearly all vans are

How well are your batteries charged up?
This cold weather saps the power from your batteries.
Some inverter cut the batteries supply when the batteries voltage discharged below a certain level
