You have some choices are you after a site as opposed to free camping?
Doolin has 2 sites both have good reputations, nagles and O’connors. Lahinch has a ocean view, judge for yourselves it’s alongside the road. Corrofin inland small and located near the burren. Green acres again judge for yourself and us at Doonbeg.
Plus there are numerous free camping spots, enjoy.
I have stayed at O’connors and it is grand. All the facilities you would expect. A nice welcome. It’s the only campsite I have ever stayed at in Ireland, so have nothing to compare it against

Ennis isn't great for camper parking. Lidl on the Gort Road seems okay. Have seen campers parked there. Have also been seen French campers parked in car parks in town, so u could try.
In Ennis coming into town from Lahinch there is a school on the left. I have parked up there on a Sunday with no problems. Didn’t stay the night as school would be operating on Monday, but I’d say it would be ideal for a Friday or Saturday night

About six years ago Ennis Town Council were talking about MH parking facilities SEE HERECouncillor Brian Meaney suggested the facility could be used for camper van parking also. “I know there is a risk that this could be abused but if it is done by advanced registration, it could be something that could be worked on,” he said.
Never heard anything that came of it though.

I had a small involvement in some of this but it was a private venture, not a council initiative. it has fallen through. One option is The Grove shopping centre, just off exit 13, which is quiet at night, pub/restaurant and Chinese on site, 20 mins walk to centre. Good parking, slight slope, farmers market under the trees every Fri morning. Option two is St. Josephs Church / Hospital. This has had a day centre added recently so not a good place for daytime parking. The West County Hotel is a place I have seen MH's parked but never asked about. Central carparks are small. All in all not the best town
