Just a thought, would a demountable unit on either single or crew cab SUV be a way through the quagmire for the OP
AFAIK the demountable is considered as just a 'load' when in place so the vehicle itself is not categorised as a motorhome (camper) at all for EU vehicle category, tax, insurance or CVRT (doe, mot)

That’s not a bad idea.... except demountables are cramped and quite top heavy to trundle around for any duration, IMO.

I seen someone stating recently on the rumour mill that is Faecebook, that insurers are refusing to insure demountables.

I can't see the truth in that. You're not insuring the demountable as a vehicle, it's the vehicle, which on occasions might carry it like any other burden, you are insuring, unless carrying the burden of a demountable is specifically excluded.
Remember, you can just put down the legs and drive out from underneath one at anytime and you have a regular car category (EU Category M1) vehicle at your disposal if it's not registered as a commercial.
